Easy Recipes from the Pot Rack – November 2024

Oh my goodness I can’t think of a yummier treat on a fall day then a tasty apple fritter! These little bites are easy and fun and make a great snack for the kiddo’s or a respectable dessert served with a side of vanilla ice cream. Easier than making a whole pie and this recipe is not fried… so there’s that! Indulge and enjoy!

Ingredients (about 2 1/2 dozen Bites)

1 1/2 cups flour

2 teaspoon baking powder

1/2 teaspoon salt

2 teaspoon ground cinnamon

1/4 cup butter, melted

1/4 cup sugar

1 large egg

1/2 teaspoon vanilla extract

1/2 cup applesauce
(unsweetened is preferred)

1 1/2 cups rough grated apples
(about 2 medium peeled apples)

Apple Cider Glaze:

2 cups powdered sugar

1/3 cup + 2 tablespoons apple cider

 

Instructions

  1. Preheat your oven to 400°F.
  2. Whisk the flour, baking powder, salt, and cinnamon together.
  3. Place the melted butter and sugar in a separate bowl and combine. Add the egg, vanilla, and applesauce, and mix till smooth.
  4. Slowly add the dry ingredients to the wet till just combined… don’t over do it! Carefully fold in the grated apples.
  5. Scoop out 1 tablespoon of batter and place them a few inches apart on a baking sheet lined with parchment paper.
  6. Bake for 10 minutes then remove from the oven and cool slightly.
  7. Turn your oven to broil and preheat.
  8. Combine the ingredients for the glaze until it’s thin but pourable.
  9. Brush the fritters with about half of the glaze then broil for about 3 minutes until the glaze bubbles …. don’t burn it!
  10. Remove from the oven and brush more glaze on top and serve.

Now who’s got a nice tall glass of cold milk!
