The Jackson County Master Food Preservers presents Tomatoes, Tomatoes, Tomatoes: How to Preserve Your Tomato Harvest, the third class in their canning and preserving series, at the OSU Extension auditorium, Saturday, July 16. Learn how to preserve your home-grown tomatoes for year-round enjoyment!

In this class, food safety and the types of preservation equipment to use will be discussed; you’ll learn what to do with those green tomatoes left at the end of the growing season; how to blanch tomatoes for peeling; how to use every part of the tomato – even the skin that most people thrown away!; and you’ll make a jar of preserved salsa to take home with you. Following class, there will be time for tasting (including dehydrated pizza leather) and for answering questions.

Class is $30, and hands-on participation is limited to 25 students. Register early to reserve your spot at https://secure.oregonstate.edu/osuext/register/1000. However, if the class fills up, class is open to “Audit Students.” This means lecture and watching only, no hands-on experience. The cost to audit-only is $20.
