Constance Jesser

Constance Jesser’s cooking classes continue to be extremely popular. She is teaching at The Jacksonville Mercantile on Tuesday and Thursday evenings from 6:30-8:30/9:00pm.

Classes are just $25.00 per person, and are limited to 12 participants.  She suggests registering early, as they have been filling up fast! Call the store at 541-899-1047 to sign-up.

THURSDAY    October 18            Mushrooms and Truffles

TUESDAY      October 23             Nut Oils and their uses

MONDAY October 29 6:30 p.m.  Sauces   Learn the how and whys of three basic sauces that are the start of many wonderful meals.  From these three sauces you will be able to create hundreds of sauces to enhance your meals.

WEDNESDAY November 7 6:30 p.m.   Dessert Sauces & Plating  Learn how to create wonderful dessert sauces and bases for ice cream or custards.  We will also learn the art of the plate.  How to plate your creations to give your food the “wow” factor seen in so many upscale restaurants.

THURSDAY   November 8   6:30 pm    Vegetarian Goes Gourmet II  Meatless Mondays?  Friends who are vegetarian?  Don’t fear, vegetarian cuisine can be hearty, filling and satisfying if you know some fun ways to work with vegetables.  You won’t even miss the meat with these new recipes.

MONDAY November 12 6:30 p.m. Bistro Favorites Learn how to make Gougeres; the perfect Vinaigrette for your salad; Steak a la Minute with Sauce Bearnaise and Creme Brulee

THURSDAY November 15 6:30 p.m. Spectacular Sides Want some great side dishes for the upcoming holidays? We will make 3 fun sides that are great make-ahead dishes sure to win over even the pickiest holiday crowd – your family!!

Tuesday November 27 6:30 p.m. GUEST CHEF Bob Budesa Christmas Stollen*. Learn the wonderful Christmas Stollen Cake from someone who has mastered this delicious holiday treat. You’ll soon be sharing this delightful Christmas Sweet with everyone. *This class is $35.00 per person

Tuesday December 4 6:30 p.m. Provencal Cuisine. What makes Provencal food so good? Using ingredients from our valley we will create a meal typical in a Southern French home.

THURSDAY December 6 6:30 p.m. Buche de Noel   Learn the wonderful Xmas Yule Log cake and how to decorate it. Meriengue mushrooms, chocolate ganache and sponge cake techniques make up this fun and chocolate centric class.

Tuesday December 11   6:30 p.m. Thai II Learn the flavor profile for Thai food. We will learn how to make three new items from Thailand. Call soon, this class always sells out quickly.

Thursday December 13 6:30 p.m.  The Chicken that Traveled the world   In this class we will be using boneless skinless chicken breasts to create three international dishes from  China, India and Italy.  You’ll never look at boring chicken breasts the same again!

Cancellation policy

Because food must be purchased and class instruction prepared in advance, class fees for cancellations made less than 48 hours prior to class are not refundable. With more than 48-hour notice of a cancellation, credit may be applied to a future class or fees can be refunded. “No shows” will not receive a refund or credit. If enrollment for a class is insufficient, Jacksonville Mercantile reserves the right to cancel the class and will notify registered students of the cancellation. In the event of a cancelled class, students may choose to take another class on our current schedule or be fully refunded.
